For those of you who enjoy a good hunk o' fish, this is what I had for dinner tonight:|
I got a 1/4 lb salmon fillet at Publix. I took a glass dish and coated the bottom w/a teaspoon (if I had to guess - I didn't measure this) of melted butter. I seasoned the skin w/pepper and sea salt and then put it in the dish. Then I poured a little bit more melted butter over the top of the fish and into the dish and rubbed the butter into the fish as best I could. I seasoned it with a bunch of chopped rosemary, and some more pepper and sea salt. I squeezed a few drops of lemon juice on top too. (I would have done this before the seasoning and rubbed it in w/the butter, but I forgot.) Then I baked it at 350 for 20 minutes.
It was SO GOOD, y'all. :D Now that I think about it, I wish I took a picture.
There was a thin part that I had cut off of the fillet and it is currently marinating in a mixture of soy sauce, hoisin sauce, lime juice, cilantro, and a little bit of red wine vinegar. I'll cook it tomorrow and let you know how it comes out!
